In recent years, more and more people throughout the United States and other countries of the western world are diagnosed with Type 2 Diabetes than ever before and one can only surmise that the reason might be related to improper diets. Why would that be so? Well, the availability of fast foods which consist of fatty, high sodium animal byproducts as well as unhealthful carbohydrates has grown and expanded tremendously. Simply put, it’s become too convenient to eat junk food and that behavior increases the risk for metabolic diseases such as Type 2 Diabetes!

Two substantial studies were conducted by Neal Barnard, M.D., president of the Physicians Committee for Responsible Medicine (PCRM) in conjunction with a handful of doctors and dietitians affiliated with PCRM, the George Washington University and the University of Toronto. These led to the conclusion that low-fat vegan diets can effectively prevent, relieve and even reverse Type 2 Diabetes.

The first was a long-term (over 12 months) clinical trial whose findings were published in the American Journal of Clinical Nutrition. Here it was shown that a purely plant-based diet helped participating diabetics lose on an average of 9.7 pounds while those participants following the conventional diabetes diet lost only 6.6 pounds. Furthermore, the plant-based diet was also more effective in reducing LDL cholesterol and improving blood sugar levels (hemoglobin A1c) than any other diet.

A second report publication in the Nutrition Reviews revealed that, time and time again, vegan diets are unfailingly responsible for lower rates of diabetes as well as heart and coronary diseases and obesity.

Besides the standard vegan whole foods of fruits, vegetables, nuts, seeds, beans and legumes here are a few suggested dishes to help diabetics plan out their meals:

- Green Juices & Smoothies
- Barley Grass
- Kale Salad
- Avocado & Sprouts Salad
- Guacamole
- Zucchini Noodles with Tomato Sauce
